Curriculum
Our Hospitality Management program features an impressive 39-credit hospitality and business core with courses such as An Introduction To Food, Food Management, Food Production, Introduction To Hospitality Industry, Accounting For Hospitality, Human Resource Management In The Hospitality Industry, and Food And Beverage Purchasing and Cost Controls, plus a capstone and choice of restricted electives or an internship is required.
Restricted electives include an Introduction to Business, Principals of Marketing, Marketing and Event Planning, and Hotel Operations.
A 45–100-hour internship provides additional hands-on experience and rounds out your curriculum at CCM.

- Lodging management including luxury, casino, convention, allsuite and resort hotels

Associate of Applied Science (A.A.S.) degrees are designed primarily for students entering the workforce after graduation. The curriculum is based on the National Restaurant Association Educational Foundation ManageFirst Program. It includes the opportunity for up to ten nationally recognized certifications ranging from Customer Service to Bar & Beverage Management.

The curriculum is based on the National Restaurant Association Educational Foundation ManageFirst Program. This degree is also fully available through the Virtual Campus of the County College of Morris. You can earn your Hospitality Management degree without ever being on the CCM campus!
Internships are always available in our field, and we support students in their desires to learn both in the classroom and in the industry with opportunities for up to 800 hours in work experience and college credit.

Becoming a member the Bailliage Joseph Donon gives you access to participate in the events we plan together with industry partner members and full rights and privileges of membership in the international Chaine des Rotisseurs. You will be inducted at an official event and receive the decorations associated with your rank as “Rôtisseurs” which corresponds to your status as a student and future professional in our field.

Mission
The mission of the Hospitality Management Program at CCM is to deliver the opportunity for dynamic, high-quality academic courses and practical learning situations that reflect the industry standards and demands placed upon individuals entering the field as entry-level managers. This educational experience is provided in a challenging and experiential setting that draws upon knowledge and skills to support students’ quest for lifelong learning and professional development. The purpose of the program is to provide knowledge and skills for entry-level managers and aspiring professionals in the Hospitality and Restaurant industries.
Featured Courses
Introduction to the Hospitality Industry
A survey course of the Hospitality Industry which provides students with an overview of the role of management within the profession. The four primary areas of the Hospitality Industry (food services, accommodations, recreation, and entertainment sectors) are all introduced. Also studied are basic concepts of event planning, ownership, human resources, marketing, cost controls, facilities management, and customer service.
Food and Beverage Purchasing and Cost Controls
A more advanced course dealing with the concepts of selection and procurement in the hospitality industry. Special emphasis is given to food cost, the purchasing function, procurement and inventory controls. In addition, forecasting, budgeting, cash management, and profit and loss statements also are studied. Included in the course is the opportunity to receive one NRAEF certificate (Inventory and Purchasing) towards the Manage First Certification.
Principles of Travel and Tourism
Principles of travel and tourism offer Hospitality Management majors, other students, and aspiring travel and tourism professionals a comprehensive overview of the principles, practices and philosophies of this interdisciplinary segment of the hospitality industry. Major concepts, including the economics, history, career opportunities, global perspective, worldwide organizations, modes of travel and related services, providers and destination pursuits, are studied.
